Written by Erica Rose Jackson I didn’t start really cooking until about eight years ago. Before that, I cook a lot of pasta (not the homemade kind) and tacos because that’s what I knew. Those recipes started getting old pretty quickly for myself and my family so I started looking up easy things to make which opened my horizons. Don’t get me wrong, I am still not a super chef by any means, but I have some easy meals that I can do well. Meatball subs This one is literally the best and everyone loves it. All you need are frozen meatballs, sauce, shredded mozzarella and sub rolls. It takes less then forty-five minutes and there is minimal preparation. I make this anytime we’re going to have people over or I need to bring a dish somewhere. It’s similar to stuffed shells in easiness but better because stuffing those shells with the cheese mixture can take a few minutes (and there’s always extra).
